Yeosu Striped Beakfish Sashimi

When striped beakfish reach maturity, they become rockfish, but rockfish are too expensive to eat.
It is difficult to clean the juveniles, yet there are places that sell them.
The texture is firm, similar to flounder fins, but it isn't greasy.
It is truly delicious.
The one below is bird shell (cockle) shabu-shabu.
