To the experienced car owners: Can you really feel the difference when driving?

For example, moving from an Avante to a Sonata to a Grandeur,
or from a Seltos to a Sportage to a Sorento.
Or things like "the 1.6 turbo is this" vs "the 2.0 naturally aspirated is that,"
or "the transmission is like this," or "it's a 4-cylinder vs a 6-cylinder."
Can you feel those differences immediately when you drive them? To me, they all seem pretty much the same.
The only time I truly felt a massive difference was back in my college days when I switched from driving my family's spare Morning to a Sonata. That was the only time the feeling was distinctly different;
since then, whether I'm driving a slightly smaller car or a slightly larger one, it all feels the same to me.
