Northeast Asian cuisine is simply better than Southeast Asian cuisine

While I believe Southeast Asia also has a decent food culture,
Northeast Asia, especially China and Japan,
possesses world-class food cultures alongside France and Italy.
Personally, I also believe Korea is right in that next tier.
It's just that preparing meals is quite demanding and its global recognition hasn't been established for long,
so it hasn't reached the same level of globalization as the culinary powerhouses yet.
I believe that difference is evident starting from the ingredients themselves.
Rather than just the chef's skill, the quality of the ingredients
accounts for about 80% of the foundation.
Southeast Asia has clear limitations due to economic power and climate.
This is especially true for meat and seafood, as well as noodles, rice, and vegetables.
While Korea, China, and Japan have clearly developed the concept of fine dining,
even Thailand, the leader in Southeast Asia, is somewhat ambiguous in the fine dining sector.
Its overseas reputation is mainly centered around casual dining.
