Shouldn't restaurants get rid of Chinese kimchi?

The customers who come in anyway
won't be eating Chinese kimchi
So why not take this opportunity to change the menu
to other side dishes instead of Chinese kimchi?
Because restaurants buy so much damn Chinese kimchi,
it seems like those Chinese people keep producing it.
Those Chinese people don't even eat kimchi...
